Roland was born on January 11, 1950, in the beautiful town of St. John, Antigua, a place that remained dear to him throughout his life.
Roland was the beloved son of the late John Simon and Henrietta Christian, who predeceased him, leaving him with enduring values of strength, kindness, and resilience. These qualities became his guiding light as he navigated through life's journey.
Roland dedicated his life to his passion for the culinary arts, a journey that began in the bustling kitchen of the Holiday Inn, where he served as the lead chef for many years. He later brought his exceptional skills to the Cathedral and the Perth Amboy Nursing Home, where his culinary creations were not just food but a form of love and care. Roland's dedication to his craft was unparalleled, and his dishes were a testament to his talent and creativity.
An active member of his community, Roland was known for his warm spirit and infectious laughter. His love for gardening, dancing, and playing cards brought joy to those around him, and he shared these passions with family and friends alike. Farming was another of his cherished pastimes, connecting him to his roots and nature.
Family was the cornerstone of Roland's life. He leaves behind a legacy of love in his children: Marvin Simon of the Bronx, NY; Michael Bonilla and wife Sylvia Simon-Bonilla of Rahway, NJ; Laroy and Danyca Simon-Irving of Roselle, NY; Jennie Simon of Bear, Delaware; Sandra Simon of Plainfield, NJ; and Allen Eaford of Perth Amboy, NJ. Roland's love and wisdom also continue to flourish in his 16 grandchildren and 2 great-grandchildren, who will carry forward his stories, laughter, and traditions.
Roland's life was a testament to the power of love, family, and community. He touched the lives of many with his kindness and generosity and will be deeply missed by all who knew him.
A celebration of Roland's life will be held on June 28, 2026, at 1:00 PM in Carteret Park. Family and friends are invited to gather and honor the memory of a man who gave so much to the world.
