It is with profound sadness that we announce the passing of Nicole Copani-Jenkins, a beloved wife, mother, daughter, sister, and friend, who left this world on June 21, 2026, after a courageous battle against an illness. Nicole was born on February 17, 1978, in Heidelberg, Germany, to Anthony Copani and Petra Fox. Her life was a remarkable journey of love, joy, and adventure, touching all who had the privilege of knowing her. Nicole grew up with a heart full of curiosity and a spirit that embraced everyone she met. Known for her warmth and kindness, Nicole never knew a stranger and saw a friend in everyone. Her open-hearted nature and genuine smile were a testament to her belief that life was enriched by the connections we make. On July 21, 2007, Nicole married the love of her life, Josh Jenkins. Together, they built a family rooted in love, laughter, and shared adventures. Nicole’s biggest joy and love were her children: Zachary Michel, Isaiah Copani, Joshua Jenkins, Malachi Jenkins, Elisabeth Jenkins, and Maggie Jenkins. She was a devoted mother who cherished every moment with them, creating a home filled with warmth and laughter. Nicole’s compassion extended beyond her family to her beloved pets and her passion for the outdoors and the Buffalo Bills. She was most at peace when camping under the stars or casting a line into a quiet lake. Her love for nature was a reflection of her zest for life and her appreciation for its simple, yet profound, beauty. Throughout her life, Nicole was a beacon of strength and positivity. She lived life to the fullest, always looking for her next adventure. Whether she was exploring a new trail, planning a family gathering, or simply enjoying a quiet moment with her grandchildren, Michael and Amelia Copani, Nicole embraced life with a spirit of joy and gratitude. Nicole is survived by her loving husband, Josh Jenkins; her cherished children and grandchildren; her devoted parents, Petra Fox and Anthony Copani; her sister, Adra (David) Baldwin; her nieces, Jessica Williams and Joscelyn Baldwin; and her great-nephew Chase Watson. She is predeceased by her step-father, Michael Fox, and her maternal grandparents, Muriel and Ilsa Pulsifer. As we say goodbye to Nicole, we remember her not for the sadness of her passing, but for the light she brought into our lives. Her legacy of love, kindness, and adventure will continue to inspire all who knew her. While our hearts are heavy with loss, we find comfort in the beautiful memories she left behind and the enduring impact of her life well-lived. A celebration of Nicole’s life will be held in the coming days, where family and friends will gather to honor her memory and share stories of the joy she brought into the world. In lieu of flowers, the family asks that donations be made to a charity of choice in Nicole’s name, keeping her spirit of generosity alive.
