Heriberto “Ed” Mercado Sanchez, a beloved husband, father, grandfather, and friend, passed away peacefully on March 10, 2026, just shy of his 92nd birthday. Born on March 14, 1934, in Mayaguez, Puerto Rico, Ed was the cherished son of the late Juan Jose Mercado and Herminia Sanchez Mercado. He was predeceased by his brothers, Nelson and Altemio Mercado, whose memories he held close to his heart. Ed’s journey through life was marked by an unwavering dedication to his family and his craft. He leaves behind his devoted wife of 56 years, Sara Jane McKishen, who stood by his side through every triumph and trial. Together, they built a legacy of love and resilience that lives on in their children: Milton Mercado, Jose Mercado, Anjanette “Angie” Sanchez, and Heriberto Mercado. Ed was also a proud grandfather to four grandchildren and two great-grandchildren, all of whom were a constant source of joy and pride for him. A retired chef, Ed devoted many years to his culinary career, gracing the kitchens of esteemed establishments such as the Union League Club in downtown Chicago, and the Ravisloe, Idlewild, and Midlothian Country Clubs. His passion for cooking was not just a profession but a way to bring people together, nourishing both body and soul with his exquisite dishes. Before his culinary pursuits, Ed spent seven formative years at GE in Ford Heights, where his work ethic and dedication were evident in every task he undertook. Beyond his professional achievements, Ed was a man of the earth, finding solace and satisfaction in gardening. He took immense pleasure in cultivating beauty and sustenance from the soil, mirroring the care and attention he gave to his family and friends. His green thumb and culinary skills were a testament to his nurturing spirit and his commitment to providing for those he loved. Ed was a man who worked tirelessly throughout his life, driven by a profound sense of responsibility and love for his family. His legacy is not only seen in the lives he touched and the family he nurtured but also in the values of hard work, integrity, and compassion he instilled in those around him. Family, friends, and all whose lives Ed touched are invited to celebrate his life and legacy at a service to be held on March 16, 2026, at 11:00 AM at the Panozzo Bros Funeral Home, located at 530 W. 14th St., Chicago Hts., IL 60411. It will be a time to honor his enduring love, remember his laughter, and cherish the memories that will continue to inspire all who knew him. In lieu of flowers, the family requests that donations be made to a charity of your choice, reflecting Ed’s generous spirit and his lifelong dedication to helping others.
