Elizabeth (Betty) Knight

Elizabeth (Betty) Knight, beloved Mom (Mimi) and cherished friend, peacefully passed away at her apartment at The Gardens at St. Elizabeth on August 7, 2026, just shy of her 100th birthday. Born on August 29, 1926, in Charlotte, North Carolina, Betty was the only child of James and Evelyn Crowell. Her gentle spirit and unwavering love blessed all who knew her. Betty's life was a tapestry of devotion, grace, and artistry. A graduate of Central High School in 1944, she attended Greensboro Women's College in North Carolina, where she mastered her secretarial skills and worked for Standard Oil. In 1948, she married the love of her life, Eppie Knight, in North Carolina. Together, they embarked on a journey that spanned 70 wonderful years, raising their three children, Jason, Carol, and Laura, in the warm and welcoming community of Columbine Knolls in Littleton, Colorado. A founding member of Columbine Catholic Church, now St. Francis Cabrini Parish, Betty's faith was a cornerstone of her life. She was an active and dedicated member of the Knights of Columbus Ladies Auxiliary, where she forged lifelong bonds and contributed to her community with kindness and compassion. Betty was an accomplished seamstress, artist, and painter, who found joy and solace in creating beauty. Her talents extended to her garden, where she nurtured life with the same care she gave her family. Cooking and baking were her love languages, and her home was always filled with the comforting aroma of her culinary creations. Betty's enthusiasm for playing Bridge was a testament to her quick wit and love of camaraderie. Her kindness, beauty, and sweet disposition were the hallmarks of Betty's character. She devoted her life to the happiness of her family, whose joy was her greatest reward. Her children, Jason of Waverly, Tennessee, Carol Knight, and Laura Nuanes, both of Denver, were her pride and joy. Betty's legacy of love continues in her five grandchildren: Jason Knight Jr., Carey Peck, Noelle Nuanes, Andrew Nuanes Jr., and Leah Nuanes, who carry forward her spirit of warmth and generosity. Betty was predeceased by her parents, James and Evelyn, her infant daughter Lisa, her grandson Cody Knight and her beloved husband, Eppie. Though her absence leaves a profound void, her memory will forever be a source of comfort and inspiration. A service celebrating Betty's extraordinary life will be held on August 31, 2026, at 9:30 a.m. for a Rosary with Mass to follow, at Christ the King Chapel at The Gardens at St. Elizabeth, located at 2835 W. 32nd Ave., Denver, CO 80211. The family wishes to extend their heartfelt gratitude to the staff and caregivers at the Gardens at St. Elizabeth, whose loving care was a true blessing. In lieu of flowers, the family suggests donations be made to a charity of your choice in Betty's honor, as a testament to her lifelong commitment to kindness and community. Betty Knight's legacy is one of love, friendship, and faith—a life well-lived and well-loved.
